Sitting around a campfire has a magic to it that is all its own.
It’s calming, yet exciting. It’s relaxing, yet invigorating. Cooking a meal by campfire is no exception.
Chef Jason Roberts is a master over the campfire. Here he shares with us a quick campfire meal packed with flavour - Gluten Free Vegetable Paella.
- 3 tbsp good quality olive oil
- 1 tbsp fennel seeds
- 1 tbsp coriander seeds
- 1 red onion, peeled and finely diced
- 1 small head of fennel, finely diced
- 1 tbsp hot smoked paprika
- 1 carrot, washed and finely diced
- 1 capsicum, (stem and seeds removed) finely chopped
- 2 long red chillies, blistered over naked flame and peeled
- 12 cherry tomatoes, charred over naked flame
- 1 cup Spanish rice (medium grain rice)
- 3 cups shredded spinach or kale
- Sea salt flakes
- 1 cup coconut yoghurt
- In a heavy based skillet over a medium heat (see note) add the olive oil along with fennel, coriander seeds and hot smoked paprika . Cook for a few moments then add in the onion, fennel, carrot, and chopped peppers, continue to cook for 4 – 5 minutes or until soft.
- Add in the rice, stir for a few moments then add in 3 cups of water, lower the heat a little (see note) and continue to stir every 3 – 4 minutes till rice has cooked, will take 20 – 30 minutes as you’re cooking without a lid. If at any time the rice is looking a little dry, feel free to add a little more water.
- Add in the spinach, chillies and cherry tomatoes; adjust seasoning with a little sea salt. Mix well; serve once the spinach has wilted with a little coconut yoghurt.
Note: Getting your campfire to “Medium Heat”
- When kindling is ablaze, add firewood. The wood should be all the same size, as much as possible. Use hardwood or hardwood branches if available. Distribute wood evenly over fire bed.
- As soon as the last flames die down leaving mostly white coals, use a stick to push the coals into a higher level at the one side and lower level on the other. This will give you the equivalent of ‘Hi’, ‘Med’ and ‘Low’ cook settings.
